On the rarer DE pairings, while I agree that the Notts are a bit hard to get a handle on, I don't think you can say the same of the Snapes or even the Riddles, where the characters themselves are well depicted, and you even have canon scenes showing their interactions. I also didn't mention the Gaunts, but Voldemort/Morfin would be another pairing that would have worked, where again both characters are well defined.
I think the reason that characters outside of the Malfoy/Black/Lestrange clan weren't used is that they aren't seen as sexy enough, or simply they aren't the first characters that spring to someone's mind when they think of Death Eaters and incest.
